Who is Paul?
A multifaceted thinker & feeler, a dreamer & a doer. With extensive experience in a multitude of mediums, he carries his ideas & understanding of how things work from one to the next. Noticing the similarities in baking bread & pouring concrete, how the accuracy or inaccuracy of weight affects the final product. Or being inspired by the way that a particular piano part blends with a drum, creating as much of a cathartic experience as lemon juice, labneh & parsley w/ salt. He sees parallels in the way things work & attempts to find the through line of cuisine through emotion, honor in tradition & experimentation. .

This is me feeling the sunset & taking a moment to myself as I was loading my truck after feeding a lovely couple of couples in Yucca Valley, CA. I stopped as I was filled with gratitude when my skin was brushed by the stillness in the air. I thought it a good moment to capture.

Traveling is where I get most of my inspiration. The markets. The people. The restaurants & food stalls. There is so much out there & they are more similar than we think. I see so many overlapping ingredients & processes. My approach is sort of like a DJ; remixing all the best things.
“This project is about saying yes to myself. It’s about taking chances & rediscovering my belief that I have something meaningful to offer. It’s about accepting where I am on my journey through this world & allowing myself to share that through connecting to the earth & it’s bounty, with people. I love food & I love providing people with & participating in experiences where our common goal is connection both to each other & the soil (or water) beneath our feet. My philosophy of cooking & sourcing finds itself positioned where locality is priority, minimizing waste & reusing “scraps” at any opportunity possible & simply having fun with flavors & people. Fika Fête is about slowing down then getting down & eating some delicious food.”
